Happy 2014 friends!! Check out my party animal puppy ringing in the New Year.... Just kidding, she's actually quite the party pooper and looked like this by 9 PM: My hubby and I had a super low key New Year's Eve night, which was totally fine with both of us. We ate and drank, played Scrabble, and enjoyed our Christmas decor and tree for one more night before I took it all down today. Happy Monday! It's crazy how fast the weekend - our last one living in San Diego - flew by. I had planned on getting a lot of packing done, and while I did make some progress, have tons to do this week for our move up to northern California. I wanted to enjoy my last weekend here, so things like the beach, hiking, and meeting up with my parents' friends who are in town took up a lot of my time. But I had a lot of fun this weekend, and think it was worth the tradeoff for my probable hours of midnight bubble wrapping this week. Have you realized what day it is? So if all of these extreme predictions are correct, the world is ending is just 9 days. Hmmm, now I'm no expert on all of the 12.21.12 hoopla, and I suppose you really can never say never, but I can tell you one thing: I am going to be really mad if I only have a few days left to live. There's just too much I want to do! Broccoli Cheddar Stuffed Potato
Today was one of those days when I couldn't figure out what I'm in the mood to eat. This afternoon I decided I'd make stuffed portobello mushrooms for dinner, only to find myself feeling totally icky about the idea of eating mushrooms when it was time to prep them. Looking to be inspired by something else, I peered around my kitchen and laid my eyes on a couple of potatoes. Thus, a veggie stuffed potato dinner was born: This recipe spices up a plain potato by adding some color to it with broccoli, red bell pepper and cheddar cheese.
