Hi friends! This weekend has been a pretty rainy one in San Diego - not that I'm complaining, since it's still been in the 60s. I'll take that any day over 25 degrees and snowy! Besides taking Harley for long walks both yesterday and today and having a tennis workout earlier with my hubby, I've pretty much been indoors the rest of the time. Late last night I decided I was in the mood for making muffins. I resisted the urge to bake right before I went to sleep, but may or may not have been deciding what kind of muffins to make and concocting a recipe while laying in bed. My requirements were that they came out yummy and moist, yet under 200 calories a piece. Happy Memorial Day weekend! Chocolate. Banana. Peanut butter. When your morning starts off with these things, you know it's going to be a good day... but first let me back up to last night. I had a girls' night at my friend Jackie's house, complete with good conversation, sweatpant attire, yummy food, wine, and playing of the game Apples to Apples. I put together a roasted red pepper hummus platter to bring to her house: Roasted red pepper is my favorite type of hummus, so it only makes sense that I would try making this kind myself. Peanut and Broccoli Pasta & A Pizza Combo for One
Today's Fitness Highlight A lot of the time for the cardio portion of my workout at the gym, I cycle on a spin bike. My gym just got new spinners that are more high tech than the old ones, telling you how far you've cycled, how many calories you've burned, etc. I took advantage of this new training tool and instead of biking for a specific amount of time today, I set a distance goal... and I spinned 15 miles with the resistance set at a decently high gear. Go me! Food In case you don't know, I'm crazy about fruit.
