Happy weekend! I'm psyched for the weekend because two of my girlfriends from Jersey, Meaghan and Marla, are flying in to visit me tomorrow. My New Favorite Dessert: Wine-Baked Peaches
This week my favorite nearby winery, Clos LaChance, was having a sale on a bunch of their wines. Naturally, I felt the need to stop by the winery yesterday to nab a couple of bottles on my way to the gym. Can't let a sale of yummy local wine pass me by! Besides buying bottles of grenache and pinot noir, I also got a bottle of their sweet late harvest semillon nectar white wine with one thing in mind: dessert last night. I had a couple of ripe peaches hanging out in my fruit basket ready to be eaten, and had the brilliant idea of baking them with some of the nectar wine, sugar, and cinnamon - because I love to sprinkle cinnamon on nearly everything - then pairing them with vanilla frozen yogurt. Peach & Apple Crumble
Ever since I made and devoured chocolate peanut butter cups last week (thankfully I didn't eat them all, since my friend happily took a few off my hands!), I've been wanting to try out another recipe from The Kind Diet. A peach crumble caught my eye, but when I figured out that 1 serving packed 900+ calories, I was reluctant to make it. Not to sound fanatical, but that seems like way too many calories for one serving of an oats & fruit dessert (though I think this could be a breakfast treat as well!). So, instead of passing up trying it out, I decided to halve the topping ingredient amounts, which in turn, nearly slashed the calorie (and fat) content in half.
