Last fall, my friend Danielle came into town for the weekend and we had a girls' wine tasting day in Temecula. We had a picnic at one of the wineries, and I had brought apples, cheese, pretzels, almonds, pumpkin bread, and a new flavor of hummus from Sabra called Lemon Twist: We pretty much housed the entire container of delicious hummus into our wine-filled bellies, and I made a mental note to try to recreate lemon twist hummus at home. Last week, my favorite HIIT studio, The Fit Mill, hosted a membership event where we worked out, then enjoyed snacks & wine afterwards. I recently began partnering with The Fit Mill with my health coaching biz, and for the occasion I whipped up a few of my recipes. It seemed like the perfect opportunity to create a copycat lemon twist ... [Read More]

Chocolate Banana Peanut Butter Bars
Happy Memorial Day weekend! Chocolate. Banana. Peanut butter. When your morning starts off with these things, you know it's going to be a good day... but first let me back up to last night. I had a girls' night at my friend Jackie's house, complete with good conversation, sweatpant attire, yummy food, wine, and playing of the game Apples to Apples. I put together a roasted red pepper hummus platter to bring to her house: Roasted red pepper is my favorite type of hummus, so it only makes sense that I would try making this kind myself. I'm all about hummus these days! It's really become my go-to appetizer to quickly whip up when having people over or going to a get-together. The recipe differs only a bit from my classic hummus, and I think this is my favorite hummus combo so ... [Read More]
Today’s Newfound Love: Avocado Hummus
My favorite quote of the day: ''For what it’s worth: it’s never too late or, in my case, too early to be whoever you want to be. There’s no time limit, stop whenever you want. You can change or stay the same, there are no rules to this thing. We can make the best or the worst of it. I hope you make the best of it. And I hope you see things that startle you. I hope you feel things you never felt before. I hope you meet people with a different point of view. I hope you live a life you’re proud of. If you find that you’re not, I hope you have the strength to start all over again.” ― F. Scott Fitzgerald This afternoon I couldn't decide between making guacamole or hummus, so I decided to try combining the two. After whipping it up in my food processor and tasting, I decided my new ... [Read More]
Cheesecake Strawberries, Homemade Hummus & Roasted Potatoes
I've drawn two conclusions from my Super Bowl snacks yesterday: #1 - If making hummus is so simple and yummy (and cheaper), why do I ever buy it prepared? Note to self: stop being lazy and make it yourself from now on. #2 - I'm not a fan of cheesecake, but I AM a fan of cheesecake stuffed strawberries! Homemade Hummus, from the cookbook The Vegan Table Makes 1 cup, or 8 2-tablespoon servings 1 can (15 oz) of chickpeas, drained and rinsed Juice from 1/2 lemon 1 TBSP tahini 1 whole garlic clove, peeled 1/4 TSP cumin Water for thinning out spread Salt & paprika, to taste Put chickpeas, lemon juice, tahini, garlic, and cumin in a food processor or blender and process until very smooth (1-2 minutes). Add a little water to thin it out (I did this a couple ... [Read More]
Super Bowl Fun
This morning I woke up feeling excited like a little kid on Christmas. (Ok, feeling like I still feel waking up on Christmas as a grown adult..) Because today is the SUPER BOWL! I'm going over to my friend Tiffany's place to watch the game and made a few snacks to bring with me: ...the homemade hummus pictured that I whipped up a bit ago. You can't tell from the picture, as hummus is not very visually pleasing, but I assure you this recipe is simple and delicious! I'm bringing celery, carrots, pretzel thins, and crackers to dip into it. ....And cheesecake stuffed strawberries! My friend Angi sent me this recipe recently and I figured the Super Bowl is the perfect occasion to try it out. I'm in a bit of a rush to walk Harley and head to Tiffany's for the game, but I will be ... [Read More]
