Blueberry Cashew Butter Energy Balls + 5 Of My Favorite Vegan, Gluten Free Energy Bite Recipes

When it comes to my eating patterns, I’m definitely more of small meals & snacks kinda girl. I like to eat every 3-4 hours, and feel like my body operates best this way.

If I eat a big meal, my belly feels heavy and too full, but when I eat smaller meals & snacks throughout the day, I feel great. Because of this, I always have lots of snacks around: in my purse, gym bag, car and obviously my pantry. Having healthy snacks around is the key to me not getting hangry!

One of my favorite kind of snacks is energy balls. I like to whip up a batch during the weekend to have on hand throughout the week. But since I get bored easily, I like to switch up my energy bite combos & am constantly coming up with new kinds. My latest energy ball creation are these Blueberry Cashew Energy Bites.

Made with rolled oats, cashew butter, raw cashews, hemp hearts, dried blueberries, and honey, they’re the perfect little snack full of healthy fats, carbs and protein.

{Note: Maple syrup, agave, or brown rice syrup can be substituted for honey to make them vegan.}

Peppermint Chocolate Chip Snack Bites {vegan + gluten free}

Earlier this week, I sent out a health coaching newsletter with tips to avoid holiday weight gain (you can subscribe via the signup form on the right sidebar! –>), and one of my guidelines is to implement an 80/20 diet balance.

I’ve talked about this concept before, but it’s the idea that 80% of your calories are from nutritious, healthy choices, and for the other 20%, you enjoy whatever indulgences you’re in the mood for. I apply this to my diet not only during the holiday season but year-round, because I believe that moderation is what works in the long haul for a healthy, sustainable relationship with food… which brings me to today’s recipe!

We all know that December is ripe with food and drink indulgences. I adore baking Christmas cookies and drinking seasonal drinks like spiked warm cider, but I also balance those treats out with healthy, light meals and a very active lifestyle.

Chocolate Cake Batter Chia Energy Bites {vegan + gf}

Energy bites are a favorite snack in my household. I’ve even turned my immediate family on the east coast onto energy bites, because I’m always whipping them up when I visit as a healthy snack to have around.cake-batter-energy-bites-1

And as a big fan of keeping things interesting in the kitchen and in life in general, I’m always coming up with new energy bite combinations. Today I’ve got a new one to share: chocolate cake batter chia energy bites!

Made with oats, plant-based protein powder and chia seeds, these vegan, gluten free bites pack a nutritious punch. They get their cake batter flavor thanks to the combo of cashew butter, cinnamon, vanilla and cocoa, and are sweetened with dates and maple syrup.

Cherry Pistachio Energy Balls [vegan, gf]

Hi friends! Today we’re talking about nuts and balls! 😉

Everyone has their go-to favorite foods that they’re constantly eating, and for me, one of those categories is nuts + nut butters. I usually eat a serving of one on the daily. Healthy fats like nuts keep my belly happy & satisfied.

Almond butter and peanut butter are my all-time favorites, and I was pretty into cashews & cashew butter for awhile there. Somehow I tend to forget that I like pistachios too.

The Healthy Habits I Practice Daily

Morning Stretches Collage

Stretch. Stretching is something that I not only do before and after my workouts, but also on my rest days too. I think it feels great to stretch my muscles, and I’m always working on my flexibility in my yoga practice. I also keep a foam roller, tiger tail, and trigger point bar in my living room so that I remember to use them while I’m watching TV.

Walk. I go on long walks with my dog every day. What started off as something I did to just get her puppy energy out has turned into a daily practice that we both enjoy. We typically go for at least a half-hour walk around my neighborhood, at the beach or a nearby park, and I usually take her hiking with me on a longer excursion once a week. The time in nature is calming and energizing, and we both come home happy!

Eat a healthy dose of fruits & veggies. Scanning through my social media feed on Instagram and Twitter, you can easily see that I enjoy lots of real foods. I’m all about nourishing my body with food made by nature!

With having such a sweet tooth, I could easily eat a ton of fruit and not eat quite as many veggies. I never go a day without eating veggies, but there are times when I don’t eat them until dinnertime. That’s where my new favorite healthy munchies comes in: Dandy® portable snacks.

Currently Loving: My Top 5 Travel Snacks

Happy Friday!

What are your plans for the official first weekend of summer? In thinking about my summer season, the next month or so is going to hopefully include lots of local SoCal fun, and then the month after that will involves lots of travel and time away from home. When I’m on-the-go traveling, especially if there are long car rides and/or long flights involved, one of the things I make sure to do is bring healthy snacks.

I just don’t think you can ever go wrong with bringing healthy food with you. It usually comes in handy at the times I prep for it – like at lunchtime on a plane – but I also find that it’s great to have snacks on hand for random times when hunger strikes. For instance, if I’m going out to dinner later than I normally eat, a snack packed in my bag comes in handy to hold me over.

So far this year, here are my 5 favorite (very portable) travel snacks!

Chocolate peanut butter energy bites. I find energy balls to be the perfect little pick-me-up! I threw a bunch of them in a plastic bag and brought some to Cabo with me last month.

No Cow bars. I recently started eating these bars by D’s Naturals, and have quickly become a big fan. They’re dairy free, and are made with organic brown rice and pea proteins and sweetened with monk fruit and stevia. At 170 calories & 20 g of protein a pop, they pack a great protein punch – especially because when I’m traveling sometimes the protein in my diet can be lacking a bit. The bars also have a ton of fiber – which is great to keep your digestive system regular when you’re traveling and eating a diet that’s different from your norm (TMI?!).

Chunky Monkey Protein Bites [vegan, gf]

I’ve often mentioned my love for on-the-go snacks on the blog. Even though I work from home most of the time, I seem to always be eating in my car bouncing around from place to place. I have the protein bar and smoothie stains on the seat of my car to prove it. Whoops.

I often whip up some type of bars or balls to have as snack options throughout the week, and today I have a new one to share that I’m loving: Chunky Monkey Protein Bites.   Chunky Monkey Protein Bites-1

We’ve got some rolled oats, chocolate protein powder, cocoa powder, and hemp hearts as our base. These ingredients get thrown into the food processor with some smooth peanut butter, maple syrup, and banana to hold them together well.

5 Healthy On-the-Go Snack Ideas + Big Slice Apples Giveaway!

Today I’m traveling cross-country to be with my family in New Jersey for the holidays. I’m looking forward to lots of time with loved ones and fun!

Speaking of being on-the-go, today I wanted to share my top picks for on-the-go snacks as of late. Since I’m big on eating small meals frequently, it seems like I’m always eating in the car. An ongoing joke that I have with my hubby is that I’m constantly trying to get food stains off the seat of my car. Nearly every week there’s a new protein bar stain or smudge of some sort. I guess I’m a messy car eater!

The basic requirements for snacks to be in the running to become a favorite of mine are simple. They’ve got to be 1.) healthy – must pack a nutritious punch, and 2.) tasty – I won’t eat it if it doesn’t please my palette people! I also love when I can get a serving of fruit/veggies in with a snack too. Here are some of my current favorite snacks:

Rise bar

Rise Bars. A few months ago the folks at Rise Bar reached out and offered to send me some of their bars to try… and I’ve been enjoying them ever since! My favorite flavor is almond honey, which packs in 20 grams of protein and contains only 3 simple ingredients: almonds, honey, and high-quality Whey Protein Isolate. I love super short ingredient lists! I also really like their carob chip bar flavor.

Energy Balls. Date bites are great for grabbing on-the-go. It’s simple to whip up a batch, and then I have it around for a week or two to nab when I need a little something. Recent favorites include the pictured oatmeal walnut hemp energy balls and mint chocolate chip date balls.

Dried Apple Slices. These are in my carry-on bag right now so that I can munch on some apple slices on the plane today! I like how a bag is 1 serving & 130 calories, so I can munch away and get my Vitamin C in for the day.

ShiftCon Recap: GMO Talk + Giveaway of Goodies!

I found this to be the most powerful sentence I heard at last week’s ShiftCon event. It’s such a simple and somewhat obvious statement, but it brings to light the fact that when you purchase something, you’re supporting a product – and not only the product itself, but also how it was made.

ShiftCon took place last week in the pretty town of Manhattan Beach, and was an event geared towards health, wellness and green living. You can check out this YouTube video to get a better idea of what the conference is all about.  I randomly won a ticket to the event through my ambassadorship with FitFluential, and was excited to check out what the event had to offer. My cousin lives in the neighboring town of Long Beach, which was great because I got to crash at her place for a few days and spend some time with her.

During a conference focused on food and the environment, it was no surprise that THE major topic of the event was GMOs. With states bringing labeling laws to elections and the House recently passing what its opponents refer to as the DARK Act (Denying Americans the Right to Know), which if passed, would preempt states from requiring labeling of GMO food, we are a really pivotal time when it comes to GMOs. I’m disheartened to know that many Americans don’t have any idea what GMOs even are, and since I learned a lot of facts at ShiftCon about them, I thought I’d share some GMO stats with you all today:

Big food companies like General Mills are pouring millions of dollars into getting the DARK Act passed

  • So exactly what are GMOs? They are organisms in which the genetic material (DNA) has been altered in a way that does not occur naturally.
  • What crops are GMO? They’re primarily in soy, corn, cotton, sugar beets and canola oil. This may not sound like many foods, but it translates to GMOs in 75% of conventional food in the U.S.!
  • With the increase of GMO crops, herbicide applications have also dramatically increased. The primary ingredient in Monsanto’s popular Roundup herbicide, glyphosate, was just deemed to be a probable carcinogen, meaning cancer causing, in the state of California.

7 Healthy Snacks & Desserts I’ve Been Eating Lately

I’ve been wanting to make s’mores for months since finding these vegan marshmallows at my natural foods store, and even included it on my Before 30 Bucket List. Mmm, now I can check that one off the list!

I’m going to share some highlights about ShiftCon – a conference that puts the topics of wellness, health, and the environment front and center – in my next post, but today I want to chat with you guys about new snacks that I’ve tried lately. As of late I’ve been obsessed with both popcorn and cereal, so here are my recent favorites of those, plus a few other yummy snacks I’ve been noshing on! 
ICONIC Vanilla Bean

ICONIC Protein Drinks. Recently ICONIC sent me their Cafe au Lait, Vanilla Bean & Chocolate Truffle flavored protein drinks to try. While I typically don’t go for milk or milk-based protein drinks, I was intrigued in trying ICONIC because their products come from grass-fed and hormone free cows and include organic fair-trade blue agave.

Naturally, I liked the chocolate flavor the best. It reminded me of these Special K protein shakes I used to drink as a teenager – only with a much healthier ingredient list, less calories and more protein. Each bottle contains 20 g of protein and 130 calories, making it an ideal easy snack post-workout when I want to fuel my recovering muscles with a nice dose of protein.

479 Degrees Sea Salt Caramel Artisan Popcorn. [gluten free] Ooh baby baby, sweet and salty popcorn! I love the short and sweet ingredient list on this popcorn and the fact that it’s made with organic ingredients and rBST and antibiotic-free butter. At 100 calories a cup, this popcorn is a perfect sweet & salty snack.

Vans GF cereals

Van’s Cocoa Sensations & Blissful Berry Cereals. [gluten free, vegan] Recently Van’s sent me these boxes of their new gluten free cereal line flavors to try, and I’ve been snacking on them often. The cocoa cereal is obviously my favorite given my love for anything chocolate. I’ve been eating some with protein powder, blueberries/sliced banana and almond milk for breakfast, and noshing on it when I’m starving waiting for dinner to cook or just want a little something sweet at night.

Made with a blend of oat brown rice, millet, quinoa, and amaranth flours and sweetened with cane sugar, these cereals are a great alternative to the artificially dyed and corn syrup-filled cereals that you (and your kids) might normally eat.

Dried Bananas

Made in Nature Dried Bananas. [gluten free, vegan] Made in Nature, one of the vendors at ShiftCon, sent me a cute package with some of their products prior to the show, and their dried banana slices were definitely my favorite! Containing just organic banana and lemon juice, they make for a perfect healthy grab-and-go snack, and I have been adding a couple of them to my smoothie bowls.
