'Tis the season to be jolly - and on the move! Who else has been crazy busy? Ever since I got home from my vacation a couple of weeks ago (more on that coming soon!), I feel like things have been go-go-go... though covering 4 cities in 3 countries was wonderfully on-the-go too. Between wrapping up end of the year work, holiday shopping and get togethers, and all of the usual busyness, I've been going a mile a minute. Oh, and throw a wildfire close to my house + being super jet-lagged and not feeling great for a week into the mix, and things have been a bit of a whirlwind. Luckily I've adjusted to west coast time, just in time to be setting off on my next trip in just a couple days. The end of my year worked out to be travel heavy, but no complaints here. I'm looking forward to ... [Read More]

Hearty One-Pot Ratatouille {vegan + gf}
Get your veggie fill with this hearty one-pot ratatouille! The recipe is ready in about half an hour & features peppers, zucchini, baby kale, potatoes & beans. It's perfect as a healthy side dish or for your main course! It's hard to believe that we're already a week into November. Before we know it, Thanksgiving will be here and the holiday season will be underway! Truth be told, I don't get to be part of the Christmastime cooking festivities as much as I'd like. My husband and I always fly to the east coast to be with our families, and with all of the traveling around from house to house, there's not all that much time for me to be in the kitchen - well, my family members' kitchens that is. In recent years I have been able to make a few things for Christmas Day at my ... [Read More]
Italian Spaghetti Squash Casserole {gf}
Hi friends! How was your weekend? Highlights of my days off were visiting Temecula wine country with my cousin on Saturday, who visited for the afternoon to spend some time with me... ...and watching the NY Giants beat the Philadelphia Eagles (good for this Giants fan, and much to the dismay of my Eagles' fan husband) + practicing some yoga on the beach on Sunday. And I'm feeling very antsy about tomorrow's election. During this election season, I thought I'd do a post about where each candidate stands when it comes to women's + health issues, but it became so glaringly obvious to me which one should become president and which one is idiotic beyond belief, I decided there was little need to write that type of post. It probably isn't hard to guess which side I'm on in this ... [Read More]

Veggie Tofu Stir Fry with Brown Rice
Happy, happy Friday! Hope that you all have some fabulous plans for the weekend. I've had a great week in Jersey hanging out with family and girlfriends, and have some fun plans that I'm looking forward to for the weekend. My week has been full of good food, and there are definitely certain eateries that I simply must hit up when I'm in town. One of those places is Veggie Heaven (my post on the restaurant can be viewed here), which I just chowed down on for dinner: (I'm digging my fortune!) And speaking of yummy, healthy Asian food, I have a new recipe to share today! ... [Read More]
