These vegan cookies are chocolatey, gooey, buttery, and a little crunchy on the outside while being soft on the inside. Plus, the rice crisps cereal gives the cookies a bit of a unique crackle factor. In other words? They're addictive! Amidst quarantine life, cooking and baking a lot gives me joy. Plus we're eating at home all of the time nowadays, and I like to help keep us healthy and strong with nourishing foods and homemade meals. Last year when I was pregnant I kept craving cookies, and my love for cookies seems to have stayed with me. A couple of cookies is the perfect sweet tooth treat in moderation. I've been baking up a storm lately, so there have been a lot of batches of cookies made over here! This leads me to today's recipe. These vegan chocolate chip rice crispy treat ... [Read More]

Chocolate Peanut Butter Banana Protein Oat Cookies {vegan + gf}
These healthy cookies are made with oats, peanut butter, banana, and cocoa powder, sweetened with monk fruit, and include chocolate protein powder for a protein boost. Ideal for breakfast, dessert, or anything in between! Have you guys ever seen photos of people's meal prep for the week that includes 5 containers of the same bland thing for each meal? If you've worked your butt off for a bikini competition and ate that way to get there, good on ya, but that looks like a bit of a nightmare to me. I like food too much, and I like diversity in my eats too much. Sure, I have my favorite smoothies and my go-to dinner recipes, but I certainly don't eat them on the daily. In general, monotonous, robotic living scares the hell out of me. No thank you, I don't want to do the same thing every ... [Read More]
Cinnamon Brown Sugar Banana Bread Cookies {vegan}
Earlier this week I deemed my hubby and me to be Mr. and Mrs. "Cookie Monster" Crane after we ate an entire batch of these cinnamon brown sugar chocolate chip banana bread cookies in just a couple of days. We both dig banana bread, which is why I make it at least once every few months. But last Saturday, when I was in full kitchen experimentation mode, I decided to get a little creative and make banana bread cookies instead of a regular old banana bread loaf. I decided to play around with using brown sugar as the primary sweetener, and then I went heavy duty on the cinnamon (which is partly the reason for the cookies' dark color) because yummmm, it's my favorite thing to sprinkle on top of nearly everything I eat. I thought about excluding chocolate chips, but then I thought, ... [Read More]
Chocolate Mint Oatmeal Flax Cookies [Gluten Free]
It's beginning to look a lot like Christmas around here! My weekend was full of holiday related activities: buying a tree and decorating it, buying outside lights and decorating my front yard, shopping for gifts, and starting this DIY craft... ...a wine cork wreath! I'm not all that crafty but I've been wanting to do something with the many corks I have around, so I decided to give it a go! I'll be sure to share the final product, which I'll hopefully have done later this week. Chances are I'll be glue gunning corks at 11 pm tonight! Coinciding with my holiday cheer, I also did some baking last weekend. ... [Read More]
Dark Chocolate Peanut Butter Banana Oatmeal Cookies [Gluten Free & Vegan]
Hi friends! I am super excited because I'm heading to Lake Tahoe tomorrow for a getaway with my hubby! I've never gone skiing before, so wish me luck. We're also planning on trying snowshoeing, and I found a bunch of restaurants that are my style -- including a couple of vegan and gluten free specific eateries that I'm looking forward to trying out. I'll certainly be recapping my trip next week, but today, let's talk about another fun topic: cookies, specifically dark chocolate peanut butter banana oatmeal cookies. How's that for a mouthful? There are a few kitchen creations that are my go-to recipes when I'm in the mood for something specific. When I get into what I think of as a cookie monster mode, this is definitely one of my no brainers to make. When I felt the need to make them ... [Read More]
Chocolate-Drizzled Oatmeal Shortbread
Happy Veterans Day! My weekend has been all about having fun and relaxing. I've been super sore lately and decided it was a good idea to let my body rest a bit. My physical therapist has been having me do a lot of glute and hip conditioning exercises. We're treating my calf injury with a sort of all-around approach, not just working out the knots and scar tissue in my calf, but also strengthening my entire left side from my hip down. I think it's great, but I've been working on smaller leg muscles that I probably don't usually target, and it has certainly been leaving me sore! Outside of physical therapy, I've been doing workouts that focus on a lot of my upper body, resulting in achy arms and back muscles. All of last week I felt sore all over the place, and that's why this weekend I've ... [Read More]
