Spring Veggie & Fontina Quiche
Hey there! Hope you had a great weekend and Easter celebration. I had plans to attend a vegetarian festival in town but the event wound up getting postponed a few weeks, so my Easter Sunday turned into a productive weekend day instead! My hubby and I are in the process of revamping our bathrooms and a few other things in the house, so we spent a lot of time picking out mirrors, faucets, paint, and toilets (so glamorous, I know!), and working around the house doing things like calking all of the holes in the master bathroom from the previous tenants (they loved to drill holes all over the place and hang up things excessively - lucky us!) and trying out paint samples on the front exterior of our home. Tofu Breakfast Tacos
Another weekend has flown by, and Monday came oh so quickly. As I've mentioned before, I telecommute for my job, and working from home has its perks: Sometimes I work in my pajamas. As a matter of fact, if I have a conference call at 8 am or earlier, it's an almost guarantee that I will not be dressed yet. I also get to work with my dog sleeping at my feet under my desk the majority of the time, which is pretty sweet. I'm lucky enough to have a pretty flexible schedule. If I need a breather or am having writer's block, I can go for a walk with my pup or take a workout break. I love to experiment in the kitchen, but sometimes life gets just too hectic to spend a lot of time playing around creating meals. This was certainly the case the past couple of weeks with preparing to move, and now, getting all unpacked. When you're not sure where your plates are or have to go digging through boxes to find a knife to work with, meals tend to be pretty simple. That's why lately my dinners have included some quick, staple meals - including brown rice with veggie quesadillas, salad with pasta, and grilled cheese & homemade sweet potato fries.
