Sometimes the best place to get recipe inspiration is the farmers' market. I love strolling around on a low-key weekend morning and checking out what produce is in season, coming up with potential recipe ideas, and picking up some goodies to experiment with. San Diego area farmers' market are a foodie's paradise, because so much awesome produce is grown locally here - not to mention all of the amazing local purveyors around, including bread makers, nut butter producers, olive oil companies, bakeries... and the list goes on. Recently I got turned onto a local vegan crouton and cashew cheese company, and I've been sprinkling their products on everything! A few weekends ago, I was walking around the Vista Farmers' Market, and I kept seeing asparagus around. Since it's starting to be in peak ... [Read More]

Spring Veggie & Fontina Quiche
Hey there! Hope you had a great weekend and Easter celebration. I had plans to attend a vegetarian festival in town but the event wound up getting postponed a few weeks, so my Easter Sunday turned into a productive weekend day instead! My hubby and I are in the process of revamping our bathrooms and a few other things in the house, so we spent a lot of time picking out mirrors, faucets, paint, and toilets (so glamorous, I know!), and working around the house doing things like calking all of the holes in the master bathroom from the previous tenants (they loved to drill holes all over the place and hang up things excessively - lucky us!) and trying out paint samples on the front exterior of our home. We currently have a bunch of different colors randomly painted in the front, but we ... [Read More]
This Vegetarian’s Wednesday Eats
Good morning! I'm switching up my day a little and blogging on this Thursday morning, instead of my usual nighttime blog action. First off, in the past couple of days I've made some blog changes I'd like to point out. For one thing, I've updated my recipe page. My recipe list was getting too extensive to be on one page, so the recipe tab you see on my menu bar above is now a drop down list, so you can check out whatever category of recipes you want to look at in separate pages. I think this makes it easier to view. I also have added a "work it out" tab in the menu, which contains links to workout related posts I've written. Feel free to browse. :) Lastly, I also added access to my Instagram on the blog, and it's now on my sidebar under my Twitter feed. I haven't really been too ... [Read More]
Spicing Up Your Veggies: Balsamic Grilled Asparagus with Shaved Parmesan
I love veggies, but sometimes they can get boring if I'm always eating them the same old ways. It's just like everything else in life -- Doing the same workout everyday? Walking the same route with my dog on a daily basis? Eating the same foods all the time? Ick, not for me, I need some variety! As far as veggies go, I'm constantly coming up with different combos to spice them up and keep my meals a bit interesting. For this evening's meal, I used asparagus to make a fun dish for dinner. Balsamic Grilled Asparagus with Shaved Parmesan 1 bunch of asparagus (about 20 spears, trimmed)1/4 red onion (thinly sliced)2 TBSP olive oil1 TBSP balsamic glaze2 TBSP shaved parmesanMixed up salt & pepper Preheat your grill to 375 degrees or medium heat. I used my little ... [Read More]
Spaghetti with Asparagus in a {Lightened Up} Cream Sauce
Hi there! It's been a beautiful day here in San Diego - 85 and the sun shining bright! The beach was a great people watching scene today. I was bikini clad for the first time in quite awhile, soaking up the sun, relaxing, and reading for a couple of hours this afternoon. No complaints here! Today's recipe centers around one of the few veggies I never ate until recently - asparagus. My hubby is a fan of it, so I started giving it more of a try lately, and have found that as long as it's dressed up with a sauce or pasta, I don't mind it at all. Enter this dish: This dish is a simple meal that can be thrown together with ease in 20 minutes flat. I paired the asparagus and pasta with a lighter version of a heavy white cream sauce to keep it more waistline friendly. Random asparagus tip: To ... [Read More]
