I love veggies, but sometimes they can get boring if I’m always eating them the same old ways. It’s just like everything else in life — Doing the same workout everyday? Walking the same route with my dog on a daily basis? Eating the same foods all the time? Ick, not for me, I need some variety! As far as veggies go, I’m constantly coming up with different combos to spice them up and keep my meals a bit interesting.
For this evening’s meal, I used asparagus to make a fun dish for dinner.
Balsamic Grilled Asparagus with Shaved Parmesan
Ingredients
- 1 bunch of asparagus about 20 spears, trimmed
- 1/4 red onion thinly sliced
- 2 TBSP olive oil
- 1 TBSP balsamic glaze
- 2 TBSP shaved parmesan
- Mixed up salt & pepper
Instructions
- Preheat your grill to 375 degrees or medium heat. I used my little indoor grill, but you can also use a real grill or just a large saute pan.
- Combine the asparagus and red onion in a large bowl. Drizzle the olive oil on top and sprinkle with salt and pepper.
- Arrange the veggies on the grill and let it cook for 5 minutes. Stir, then let it cook again until tender (about 5 minutes more).
- Remove veggies from heat. Drizzle balsamic glaze over top, and sprinkle with shaved cheese.

Another way that I spiced up my veggies this week was by making sesame broccoli:
I took a head of broccoli, chopped it up, sauteed it with a few cloves of minced garlic in sesame oil, then sprinkled sesame seeds on top. Easy but different than the same old same old!
And when it comes to string beans, my favorite way to make it more exciting is to throw together a feta green bean salad…but the possibilities are endless!

Your so right, I do always eat the same vegetables…string beans or a plain salad. I might need to rethink how I cook and eat them!
